I just want to let you know how
much we are enjoying the produce! Last night I made a delicious dinner with fresh Copper River salmon topped with dill and
tarragon, rice with fresh parsley, kale lightly sauteed in olive oil and balsamic vinegar, a local wine, and Moroccan mint
tea after the meal. Everything was so delicious, but the funny part was that even though I cooked two bags of kale, one from
last week and the other from yesterday's offerings, everyone wanted more! We all eyed each other's plates to be sure
no one was "hogging" the greens because they were the most popular dish served. We burst out laughing when we heard
ourselves -- "Everyone make sure you don't take more than your share," "I haven't had mine yet; leave
enough for me!" The kale was just so incredibly flavorful. Eating the CSA produce is such a treat and makes this
time of year really special. So, thanks again for being here and growing all the great variety of vegetables and herbs.

We had a variety of vegetables that we wouldn't have usually picked up at a farmer's market or store if left
to our own devices, and it would have been awful to waste them, so we had to learn how to prepare and eat them. What a great
challenge! Our menus seemed so much richer as a result, and it was wonderful to try new things. I have a lot of new favorite
veggie dishes now. Everything was fantastic, but in particular the potatoes were amazing. We enjoyed the rainbow
chard all season long, and the green beans were also delicious. The tomatoes exceeded expectations, as did the herbs, especially
the basil. Keep doing what you're doing! I'm going to be sad to go back to regular food when the season is over.
